WIAW - Dragonfruit & Chia Pudding

To be honest - this is what I ate on Tuesday.... last week! 

I am particularly in love with making 'pizza' like this.
Smoother a piece of lebanese bread with chili flavour hummus, top with piles of fresh baby spinach leaves & pour on a mini can of BBQ flavour baked beans. 
Bake for 15 minutes - OH MY YUMMY!!!!!!!!!!!!!!!!!!!!!!!! 



But the real reason I added this to WIAW was really just because I wanted a good excuse to share with you this awesome 
Dragonfruit & Chia Pudding that we had for dessert!


You'll need:

1 pink dragonfruit
165ml lite coconut milk
1 Tablespoon coconut sugar
1 Tablespoon chia seeds
1 teaspoon vanilla

Remove the flesh from the dragonfruit and place in a blender with all the other ingredients.
Blend til smooth.
Pour into serving dishes and refrigerate for at least 1/2 hour. 
Sprinkle with coconut if desired.
Store in the fridge til ready to serve.

Makes 4 small servings.

Bread Bean Pies

Do you find that at this time of year you need super easy dinners?
WAIT - I need super easy dinners all year round ;-)


This quick & easy meal idea can be served by itself, or with any side you like. 
They also make great lunchbox items(with a lid) or a filling snack.

You will need a pie-maker! I picked one up for less than $15 a few years back & its just been a really handy item to have in the kitchen! To be honest I don't often use it for pastry pies(other than for my husband) but its amazing the amount of other uses it has too!
If you don't wish to use a pie-maker this idea would also work in a ramekin & baked in the oven!

 
All you need to do is use the bottom cutter & roughly cut out a piece of bread (old bread works well too!). 


Line the pie dish with the bread & pour in baked beans in any flavour you desire!


Close the lid & in 7 minutes you'll have yummy as bread-bean pies :-)

I like these without a lid, but you can put a bread lid on too if you want!

Breakfast burgers

This recipe was inspired by mcdonalds! hahahaha - now don't laugh its true!
I was just thinking, how come the only 'veg' breakfast that cafes seem to be able to come up with is eggs and cheese on toast!
So i decided to make a burger that feels like it's a breakfast burger!
Somehow the corn flake crumbs and the baked beans just make it feel like its breakfast time!
PS - it also makes for a yummy dinner with a side salad!


You'll need:

1/2 red onion, chopped finely
1/2 tin baked beans (i like the bbq flavour ones but you can use any flavour you like)
1/2 tin corn kernals
1/2 cup kellogs corn flake crumbs

2 tablespoons flax seeds, mixed with 2 tablespoons water (this will stick together quite a bit)


Drain the sauce from the baked beans & the corn.
Mix all the ingredients together in a bowl.
Shape into patties.
Lightly fry.


Serve on a bread roll with BBQ sauce and fried onion & a slice of tofutti cheese.
Who needs cafe breakfast when you can make your own this good!!!!


Alternatively, you can have this as a meal with salad!

Easy bean dip

This is a tasty & heathy dip. Serve with chopped vegies or pita bread. Also works well as a spread on a sandwich.


You'll need:
1 small tin baked beans (any flavour you like)
2 tablespoons tofutti better than cream cheese (best if left out of fridge for an hour or so to soften)
1 teaspoon cumin
1 shallot


Drain most of the liquid off the baked beans.
Put into a small mixing bowl with the tofutti.
Mash together, til beans no longer resemble their shape.
Add shallots and cumin.
Mix well.
Serve in a nice bowl & sprinkle with parsley (not like i have done for this photo ;-p)



This dip also carries well. I often make it for my daughter to take to school in a small container with baby corn & carrots.
