Banana Choc Pudding

Just because sometimes we all need a little sweet treat in our lives....

Banana-Choc Pudding
You'll need:
400g loaf of wholemeal bread (I used half an unsliced 800g loaf)
400ml lite coconut cream
1 1/2 cups soymilk
2 Tablespoons egg replacer
1/2 cup brown sugar
1 Tablespoon vanilla
1 teaspoon cinnamon

3 overripe bananas
100g dark chocolate (I used Lindt 70%)

In a large bowl, mix together the coconut cream, soymilk, egg replacer, brown sugar, vanilla and cinnamon.
Tear the bread into bite-size pieces and place in the bowl of the cream/milk mixture. Press down gently to encourage the bread to soak up the liquid. 

Mash the bananas in another bowl. Melt the chocolate in a microwave safe dish on 50% power. Once completely melted stir chocolate through the mashed bananas. 
Using a lined 20cm round cake tin, pour half the saoked bread into the bottom of the tin and press down gently.

Pour the banana/chocolate mixture over the top and then pour the remainder of the bread mixture on top and make sure it completely covers the banana/chocolate.

Place in a preheated 180C oven for 40 minutes.
Allow to cool before turning out onto a plate. Sprinkle with cinnamon sugar.
Slice and serve.

WIAW - Dragonfruit & Chia Pudding

To be honest - this is what I ate on Tuesday.... last week! 

I am particularly in love with making 'pizza' like this.
Smoother a piece of lebanese bread with chili flavour hummus, top with piles of fresh baby spinach leaves & pour on a mini can of BBQ flavour baked beans. 
Bake for 15 minutes - OH MY YUMMY!!!!!!!!!!!!!!!!!!!!!!!! 



But the real reason I added this to WIAW was really just because I wanted a good excuse to share with you this awesome 
Dragonfruit & Chia Pudding that we had for dessert!


You'll need:

1 pink dragonfruit
165ml lite coconut milk
1 Tablespoon coconut sugar
1 Tablespoon chia seeds
1 teaspoon vanilla

Remove the flesh from the dragonfruit and place in a blender with all the other ingredients.
Blend til smooth.
Pour into serving dishes and refrigerate for at least 1/2 hour. 
Sprinkle with coconut if desired.
Store in the fridge til ready to serve.

Makes 4 small servings.

Quick Fix Main

Do you have a day that is particularly busy? A day that you come home later than usual and that seems to run-in to dinner time? Need a quick and easy fix?.......

This is a great meal for those evenings.
It takes less than 15 minutes making it soooooo not worth getting take-away!
Its so quick & easy to prepare and yet it's still very tasty & satisfying.

This meal will serve one but you can just add as much as you need to serve as many as you need! Easy!

Water Saute a chopped carrot, a handful of chopped button mushrooms, 1/2 chopped green capsicum, a small bunch of broccolini. Saute for approx. 5 minutes until veggies are soft.
Add a 270ml can of coconut cream & stir thoroughly. Leave on the heat and bring to a boil. Turn the heat down & allow to simmer & thicken.
Slice a small zucchini & place in a microwave safe dish & heat on high for 3 minutes until zuchhini is soft. Drain & place in a bowl.
Pour the coconut mixture over the top of the zucchini & sprinkle a small hanful of peanuts on top.


Too easy!
Very Tasty!

Winter Curry & Couscous

For an easy curry on a weeknight you can't go past this.


I don't slave over a mortar and pestle for hours...... to tell you the truth - I just can't be bothered too!
This is a basic curry that tastes delicious & is hassle free.


You'll need:
1 medium sweet potato, peeled and chopped into 2cm cubes
1 small brown onion, peeled & finely chopped
1 cup green lentils
1 1/2 cups boiling water
270ml can of coconut cream
2 tablespoons red curry paste
1 teaspoon curry powder
Cous cous & snow peas to serve

Prepare the couscous per packet directions - add a teaspoon of curry powder and stir to combine.
Pour the lentils into a container with a lid. Add the boiling water & let sit for 15 mins.
Warm a frying pan. Add the onion & lightly brown with a water sautee.
Add the chopped sweet potato & stir for 3 minutes.
Add the lentils WITH the water that was used for soaking.
Add the coconut cream & the curry paste. Stir until all ingredients are well combined.
Bring to the boil, and then turn the heat down to low & simmer with a lid on for 20 mins.
Most of the liquid will be absorbed by then & the sweet potato will be softened, as will the lentils.

Serve over the prepared couscous with steamed snow peas.
