Everyone loves potato right?!? This is our version of 'baked' potato without all the added oil.
BLISTERED POTATO "CHIPS"
Cut potatoes into thin sliced, about 1cm thick each.
Place on a lined baking tray.
Bake in a preheated 200C oven for 30-45 minutes until blistered, crispy and golden brown. (Time will vary depending on how big and how thick the potatoes are.)
Serve :-)
Can be eaten plain or as part of a meal. We love to have a bean & veggie mix served over the top! Also could be used as a base for nacho's!
For some reason I have never baked potato this way. I don't know why - these look great!

DeleteI don't know if I have set out to roast potatoes like that but I have had it like that when I do roast potatoes occasionally - sounds great with nachoes on them

DeleteAs I am a mayonnaise addict, I would eat these hot with mayo:))) Yum!! Or with sour cream and sweet chilli sauce.

I love roast potatoes like this too! Sometime we do them thick like this and others we make them thinner (V Slicer) and make crisps... those work well dry fried too if you're short on time but you end up having to do more batches. The last time I made them for my husbands friends they disappeared as soon as they left the pan!
