Easiest Chocolate Cake Ever

This cake is deliciously light and fluffy.
Its so easy to make that you can prepare it with limited notice!
This is a great basic cake. I love having it plain but you could serve it with icing/topping, berries or just a light sprinkling of icing sugar.

You'll need:

1 1/2 cups wholemeal flour
3/4 cup sugar
1/4 cup cocoa powder
1 teaspoon baking soda
1/2 cup apple sauce/puree (1 x 120g tub**)
1 Tablespoon apple cider vinegar
1 teaspoon vanilla
1 cup water

Place all the dry ingredients in a large bowl. Stir until well combined. Make sure the cocoa powder doesn't have any clumps in it and that the baking soda is stirred in thoroughly.

Make a well in the center of the dry ingredients and add the wet ingredients.

Stir until well combined.

Pour into a baking dish of choice (I use a 24cm square dish).

Bake on 180C for 35-40 minutes until a skewer poked into the center comes out clean.

Slice and serve.....      or keep it all for yourself ;-)
It keeps well when stored in an air-tight container. I can't really give an estimate of 'days' because it never lasts more than 2 in our home!!!

**I love to use these "Coles" brand tubs of apple puree. They are so easy to use for cooking, they measure 1/2 cup. I have not had much luck finding unsweetened apple sauce in stores and these are sweetened only with fruit juice concentrate. They use a much higher amount of just apples, which is great :-)

  1. Now that does look good. If I made this out of ordinary flour (not wholemeal) do you think I would need the same amount?

    1. Hi Jo - yep the same amount of white flour can be used in place of the wholemeal and it will work out exactly the same :-)

  2. Made this today - slightly modified - very moist and so yum!!

    1. Wooo hoooo that is great news! I'm so glad it worked out for you :-)
