Kids Lunchbox Club - Nut Bars


A wonderful sugar free treat for your kids (or your own) lunchbox. 
These bars are super easy to make and they are really tasty.
If your school is nut free then just substitute seeds as needed.


VEGAN SUPER BARS (as named by my daughter)
aka NUT BARS
You'll need:
1 1/2 cup oats
1/4 cup ground flax seeds
1/4 cup almonds
1/4 cup cashews
1/4 cup dessicated coconut
2 Tablespoons sunflower seeds
2 Tablespoons pepitas
150g soft silken tofu
1/2 cup apple sauce
1/4 cup pure maple syrup


Blend the tofu, maple syrup and apple sauce together until smooth and creamy.
Smash the nuts. I find it easiest to do this in a sandwich bag, using a 'meat' mallet.
Combine the oats, nuts, seeds, coconut and tofu mixture together in a bowl and stir until well combined.
Pour into a lined 20cm x 30cm lamington tin.
Bake in a preheated 160C oven for 40-45 minutes until browned and mixture holds together.
Cool before slicing.
 Makes 14 pieces (depending on the size you cut them too). 

Wrap in foil and decorative paper for added lunchbox appeal! ;-)

Best served with 'dolphin fruit' ;-)

    1. Yes I'm very tempted to get some Bento boxes atm, but I just can't validate it when we have so many lunchboxes lol
      That said, I do love all the ideas that are around for Bento boxes!

  2. These sound absolutely wonderful! I'm amazed that you're allowed nuts in your schools. We're not even allowed coconut, let alone cashews or almonds! Do you have kids with nut allergies in your school? I think we have at least one in each class with a serious peanut or groundnut allergy :( I don't know what's happened as it wasn't this way when I was a kid!

    1. I'm so so grateful we're allowed nuts at school - it sure makes the morning packing routine so much easier!
      I do wonder why nuts are picked on, esp when dairy allergies are far more common and shellfish allergies are far more serious!!!!!!

  4. I love how cute they look in the packaging - our school is nut free so we would need a seedy version - I guess some pepitas would work ok here - love the bars

  6. Oh my these look delicious!! I might have to play with adding protein powder to see if I can make them a bit higher in that area, but they sound fantastic!
