Christmas Drink #2 - Pine-berry Slush


Drink #2 --> Pine-Berry Slush

This is a great drink for those super hot days we get here around Christmas time! 
Its so refreshing & so easy to make!

(These quantities make 2 large glasses - you can adjust as needed. Fill your whole blender to make a great party drink for many guests!)


You'll need:

  1 cup frozen chopped pineapple
  1 cup frozen raspberries
  1 cup cold water
  1 Tablespoon maple syrup

 





Put all ingredients in a blended and blend until all pieces are broken down!




Serve!



You can't keep this as it will melt & not have the 'slush' texture anymore - though it will make a lovely juice!
Note: I added the maple syrup because I find raspberries a bit tangy by themself - -you can omit it is you like the tang that comes with raspberries!

One-Serve Pineapple Prune Cake

Sometimes we don't need to make a whole cake! Even feel like you want just a bite but not have to worry about the rest of the cake?!?
That is why I'm a big fan of these single serve, quick & easy cakes!

The combination of prune & pineapple might sound a big odd, but it really is an amazingly tasty mix. Its like a bit of tang with lots of sweetness!


I'm a BIG fan of this prune spread.
Its available in health food store. 
It is simply ground up prunes, so you could always make some at home.

Bonvit also make a date spread - but don't get me started on that...... mmmmmmmmmmm, I could eat it in spoonfuls. :D

These are great for adding to baked goods or for using as a healthy spread. 

I definitely recommend trying them!




 

Now for the one-serve cake!

You'll need:
2 heaped spoonfuls of pineapple (either fresh or canned)
1/2 cup wholemeal flour
1/4 teaspoon baking powder
1 teaspoon maple syrup
1 Tablespoon prune spread
1/4 cup plant milk

If using fresh pineapple, chop into tiny pieces, or mash canned pineapple. Place all ingredients in a small bowl and mix until well combined. 
(You can adjust the amount of maple syrup to suit your own desired sweetness - I think its even sweet enough without any!)
Spray or line a ramekin and place the mixture in.
Microwave for 2 minutes (I use a 1100W microwave - adjust time as needed).
Gently press cake out of ramekin (it should fall out with a gentle up-side-down shake!!!) and serve :-)

If you're a fan of coconut cream - it truly makes for a perfect match!!!

2 apple refresher

This drink is amazing!
I don't really know how to explain it's flavour that describes quite how amazing it is. Let's just say its smooth and refreshing and tangy and sweet with a touch of creaminess :-)What a great summer afternoon refreshment!


Combine in a blender:

1 cup frozen chopped pineapple pieces
1 granny smith apple (chopped into pieces with core removed)
1 Tablespoon ground flax seeds
juice of half a lemon
1/2 cup plant-milk



Blend until smooth. You may need a touch more milk depending on your blender.




Serve :-)









So refreshing!

Tropical Brown Rice Breakfast

This is far to simple to count as a real recipe! ;-)
But I needed to share this breakfast idea with you because it's very tasty & very filling, a breakfast essential.

Place 1/2 cup cooked brown rice in a bowl & microwave til just warmed through. Pour over 150ml almond milk. Add half cup sliced pineapple and a chopped banana. Top with 1 Tablespoon shredded coconut, 1 Tablespoon sunflower kernels and cinnamon.

Easy breakfast = great start to the morning

Pina Colada Doughnuts

Ok so these are actually kid friendly as they don't really have rum in them! Though I'm sure you could add some for an adult treat!  The term "Pina Colada" is known as that marvellous taste combination of pineapple & coconut!

And yes, these are marvellous! :-)

You'll need:
A small tin of pineapple pieces
1 cup self raising flour
1/2 cup coconut
1/4 cup raw sugar
1/4 cup soymilk

Put the whole tin of pineapple pieces into a bowl and mash - Don't drain the pineapple pieces. You can mash thoroughly til little pieces are formed or you can leave bigger pieces if you prefer.
In a large bowl combine the flour, sugar & coconut. Stir well then add the mashed pineapple pieces and soymilk. Combine well but don't overmix.
Pour into a oil sprayer doughnut pan & bake at 180C for 15 minutes.

They come out a lovely golden brown colour.
These are delicious just plain like this - or else for an added little treat you can add some glaze.
The glaze is really easy - just mix 1/4 cup icing sugar with approx 2 teaspoons of water - mix well, then drizzle over the doughnuts & top with coconut shreds.

Hot Days call for Cool measures

This is the perfect afternoon snack for children on hot days!
Who needs zooper doopers when you can make this in 5 mins flat!

I like to keep a decent stash of frozen fruit in my freezer - it always comes in handy.


You'll need:

1 cup frozen pineapple
1 cup frozen chopped strawberries pieces.
2 oranges, juice freshly squeezed - (of course you must eat all the guts out of the oranges once you have juiced them!!!!!)

Put it all in a food processor, or hand held blender.
Blend til smooth!


This amount will  make you 2 large servings or 4 smaller size servings.

Refreshing smoothie

Here's a refreshing smoothie for those hot days.

1 cup chopped and frozen pineapple pieces

3/4 cup grapes

1/2 cup ice cold water

Blend together until smooth.

Surprisingly tasty :-)

Apple Pineapple Pudding Cake

Want a quick and easy cake recipe that still tastes yummy?!?

Best thing about this cake is that its FAT FREE & SUGAR FREE! 
(Does that mean I can eat the whole thing?)


All you need is:
          1 x 440g can pineapple pieces
          2 cups plain flour
          2 teaspoons baking powder
          1/2 cup apple sauce
          2 Tablespoons agave nectar
          1 teaspoon vanilla

Mash the pineapple pieces with the juice from the can.
Mix the baking powder into the flour. 

Combine all ingredients together and mix well. 
Spread mixture into a cake tin lightly sprayed with oil.

Bake at 180C for 35 minutes.
Sprinkle with cinnamon and slice to serve.

This also works really well served as a pudding because it is not fluffy/airy like a cake but quite dense.
Great topped with whipped coconut cream.

This recipe also works well with pie apples in place of the pineapple.
For individual cakes the mixture also works well in ramekins but reduce cooking time.
Tip: This cake doesn't keep well as it has no preservatives in it. Best consumed close to time of cooking or within a day.
