WIAW - Dragonfruit & Chia Pudding

To be honest - this is what I ate on Tuesday.... last week! 

I am particularly in love with making 'pizza' like this.
Smoother a piece of lebanese bread with chili flavour hummus, top with piles of fresh baby spinach leaves & pour on a mini can of BBQ flavour baked beans. 
Bake for 15 minutes - OH MY YUMMY!!!!!!!!!!!!!!!!!!!!!!!! 



But the real reason I added this to WIAW was really just because I wanted a good excuse to share with you this awesome 
Dragonfruit & Chia Pudding that we had for dessert!


You'll need:

1 pink dragonfruit
165ml lite coconut milk
1 Tablespoon coconut sugar
1 Tablespoon chia seeds
1 teaspoon vanilla

Remove the flesh from the dragonfruit and place in a blender with all the other ingredients.
Blend til smooth.
Pour into serving dishes and refrigerate for at least 1/2 hour. 
Sprinkle with coconut if desired.
Store in the fridge til ready to serve.

Makes 4 small servings.

  1. That pudding is SO beautiful! We can get Dragonfruit here - but it's considered VERY exotic, and therefore very high priced, but not ripe - so it doesn't really taste good : ( I'd LOVE to try some of the beautiful stuff you can get there! : )

      I do like it for an occasional treat though when we can get it! :-)

  2. I have never seen dragon fruit and have no idea what it tastes like. This is an amazing colour and looks like on tasty dessert. My favourite chai pudding is chocolate and ate quite a bit over summer as its so nice on a hot summers day. I really must try this one. It would also be good with raspberries too.

    1. Chocolate and raspberry is such a wonderful food combination.
      I'm not sure that raspberry would go so well with dragonfruit though!
      I LOVE the bright colour of the dragonfruit - it's so pretty!

  3. Wow that is one stunning coloured pudding! My niece is heading to Australia next month so I'll tell her to look out for dragon fruit. That's such a cool name for a fruit!
    Like Jo, chocolate is our favourite chia pudding flavour. We usually have chocolate & banana or chocolate & orange.

      I love the flavour combo of choc-orange, I'll have to try it as a chia pudding :-)
