Welcome to WIAW :-)
Is it really Wednesday already? This week has been going really quickly for me.....
Breakfast seemed amazingly good for something so simple! I guess it just goes to show that basic foods can be so satisfying and delicious too!
Soaked oats with ground flax seeds, apple sauce, blueberries and a sprinkling of cinnamon |
I took a packed lunch to work. Bits and pieces! I love doing this lately!
Today's boxes were brown rice and carrot salad with a shredded carrot and apple cider vinegar, and a spinach, red capsicum, mushroom and chick pea salad.
Served with a slice of Cornbread. This cornbread recipe is from Dr McDougalls March Newsletter.
It really is the most delicious cornbread recipe that I've ever tried!
For an afternoon snack I had a square of this Pumpkin Pie Squares recipe, along with a mandarin. First lot of mandarins for the season!
I was very organised this morning and prepared the slow cooker. I like to get it done most Wednesdays if I can. It makes the evening so much easier.
And I must admit that it was well worth the extra effort this morning so that after my long drive home I could be welcomed by a bowl of warm soup as I walked in the door. Now that is something to smile about! :-)
Mmmmmmmmmm soup! So comforting as winter approaches!
Question of the day:
What are some of your favourite winter comfort foods?
I LOve my crock pot for exactly the reason you say...it's ready when I get home! Is there a recipe for your soup that I missed? Thanks!
ReplyDeleteSorry I haven't done a recipe for the soup.
DeleteI simply chopped a mixture of veggies (leek, zucchini, onion, carrot, potato) added a can of butter beans and a can of tomatoes and some herbs :-)
I love using my crock pot too for just that reason.
ReplyDeleteYummm! I just got a crockpot for Christmas, so it has been fun to try new recipes!
ReplyDeleteOH YAY YAY! How exciting! I hope you get a lot of great use from it :-)
DeleteThat soup looks fabulous!! Soup is definitely the absolute best comfort food during the cold months!
ReplyDeleteSoup is definitely one of my favourite winter comfort foods! I usually make a pot every week for lunches. Your soup looks nice and healthy and I love the combination of veggies in it.
ReplyDeleteLeftover soup is so awesome :-) Makes for fabulous lunches hey!!!
DeleteI really must get my slow cooker out and start making soup again as the weather in the evenings are starting to turn cold at night. . Nothing nicer than coming home to the smell of soup or casserole. I like mine with crusty bread.
ReplyDeleteVery true - it sure makes the evenings easier. Mmmmmmm bread with soup is such a great combination! :-)
DeleteYour food all sounds great :) Would you believe I've never had cornbread? Crazy! I shall have to try out your recipe.
ReplyDeletehehehe well I do believe it because I only tried it for the first time a few years ago! I don't think its very popular in Aust.
DeleteLet me know how you go with it if you end up trying :-)
Your lunch is so gorgeous :) I've never had cornbread either.. it's on the list!
ReplyDeleteI don't make it often but I really love it when I do :-)
