Easy DIY Cereal

Cereal's these days container many additives, and that's not even the cereal that people KNOW is bad for them!
Here's a great alternative to store-bought cereal. Yes I've used some sweetener - that way it's enjoyable, but with much less sugar than other cereals!
Its really tasty and easy to make.
You'll need:
4 cups rolled oats

1 cup coconut
1/2 cup peanuts
1/2 cup sunflower seeds
1/2 cup ground flax seeds
1/2 cup applesauce
1/4 cup golden syrup

Mix all ingredients in a large bowl until well combined. 
Spread onto lined baking trays (I used two).
Bake at 160C for 40 minutes stirring every ten minutes.
This doesn't end up as crunchy as granola and its not as moist.
It is definitely more like a 'cereal'.


Of course, you could always make this cereal without baking it - just omit the apple sauce and golden syrup. It just won't have quite the same flavour.

Cereal Bars

Sometimes cereal is popular when its first opened and then it seems to sit in the packet with no-one wanting to eat it!
Does that ever happen in your household?

Here's a great way to use up 'leftover' cereal!
I have used cheerios but other cereals would work equally as well.


You'll need:
          2 cups cheerios (or other cereal)
          3/4 cup craisins
          1/4 cup coconut oil
          2 Tablespoons peanut butter

In a bowl melt the coconut oil and peanut butter together in the microwave. Melt until completely soft and easily stirred. Time will vary depending on your microwave and the coconut oil used.
Stir in the cheerios and craisins. Mix well until all the cheerios have some of the oil mixture on them.
Press spoonfuls of the mixture into a muesli bar maker or a lined small baking tin.
Set in fridge.

If you have made these in a baking tin, you'll need to cut the mixture into bars or slices.

The oil/peanut butter mixture will settle on the bottom - but there is still enough on the top of the bars to hold them together.

Quick bites

Yep, I love fruit balls of any description really....
So I've just decided to add another variation to the collection!

I have downsized in order to make them no longer sit in a container in the fridge and tempt me to be greedy for days on end!

This recipe makes just 6-8 balls depending on the size you choose.
Great for a little afternoon treat as they take no time at all & can be eatten straight away.


In a bowl crush one weetbix. Add 2 Tablespoons cocoa powder & 3 Tablespoons mixed dried fruit (you could also just use raisins, or dried cranberries for a varied flavour).  Combine. Stir in 2 heaped Tablespoons natural peanut butter & mix well. This will take a few minutes for the peanut butter to spread around well but eventually the mixture will all come together and hold its shape.
Using wet hands take a tablespoon of mixture and roll into bite size pieces.

Optional: Roll in coconut.

You can chill these for half hour before serving if you desire.... or else just comsume straight away (that was my preference!).

Cereal Bars

Great way to use up any leftover cereal.

You'll need:
2 cups cereal
2 tablespoons brown rice syrup
2 tablespoons nuttelex
1/4 cup brown sugar
approx 2 teaspoons water

Melt the nuttelex & brown rice syrup in a pot. Add the brown sugar & stir until melted - do not overcook.
Pour cereal into a bowl & add the melted sugar mixture. Add the water only if needed to keep the mixture moist.
Put into a muesli bar maker - or alternatively press into a lined baking tray. Put into fridge until set - at least 1/2 hour.
Press out of muesli bar maker - or cut the mixture into bars from the baking tray.

Delicious with soy yogurt & passionfruit.
