Meatless Monday - Squash

 Today's Meatless Monday ingredient is
Squash
In America the word "squash" would  be the equivalent to our "pumpkin" here in Australia, but since I already did a pumpkin post for Meatless Monday, I decided to do a true Squash post.
Here's Australian squash:
(Any of my American readers like to inform me what you call this vegetable over there???)


Simple Squash Stir-fry

Finely slice a large zucchini and 250g yellow squash
Saute over high heat with a splash of veggie stock to stop from sticking.
Sprinkle with a teaspoon of each: granulated garlic, dried chives and dried parsley.
Serve as a side dish to any main.


I must admit that squash is not an ingredient that I buy regularly. However I do enjoy eating it - especially when it's not overdone. I like it to still have a bit of crispness left in it.

  1. I love zucchini but don't eat that yellow squash so much - I think partly because I don't see it in the shops so much but this looks like a good way to eat it - I have heard it called patty pan squash which I like but most of all I loved seeing it called flying saucer squash somewhere :-)

    1. Flying saucer squash is the coolest name ever! I might have to start calling it that from now on. Yes I agree that it's not something I see too regularly either!

  2. Not my favourite as I find them bland, but perhaps cooked this way they may be more interesting.

    1. I think they are definitely a veggie that needs some added spices or other flavour & I must admit I prefer then fried as opposed to boiled.

  3. I like the American term for these as patty pan squash but like you, this isn't something I buy very regularly. I like your take on it though!

  4. I first learned of that type of squash (like other said, patty pan squash) in Farmville, remember that on Facebook years ago? :) I have never actually cooked with it, just knew what it was. :)

    1. haha oh yes I remember Farmville - I used to be so addicted to that game and then deleted it because it was wasting so many hours of my life ;-) Now I'm wondering why I never realised that is what that veggie was ;-)

  5. I've seen them called patty pan squash here in the states, but the ones I've seen here are white & not yellow. They are my absolute favorite squash & are hard to find in my area.

  6. I grew up hearing it called summer squash. When I buy it, I usually mix it with zucchini like you do and saute it as well. Good stuff!
