Apple Wonton Fold-overs

When I was younger we used to make apple fold-overs that we called "treats for Daddy". I still make "treats for daddy" but now with my daughter and also without thick pastry.

These are a super easy and delicious treat. 
Great for when visitors pop over or for a quick dessert.
They are very quick to make.


APPLE WONTON FOLD-OVERS
You'll need:
wonton wrappers
pie apples (either store bought or home made)
cinnamon
sultanas
plant milk of choice
Optional: whipped coconut cream for dipping

Lay wontons out on a bench.
Place a few pieces of pie apples on one half of the wonton wrapper. Add a few sultanas in each wonton and sprinkle with cinnamon.
Fold over to make a triangle shape and press the edges together firmly.
Place on a lined baking tray and brush the tops of the wontons with plant milk.
Place in a preheated 200C oven for 10-15minutes until lightly golden brown.

Kids Lunchbox Club - Choc Coco Sultana Slice

Who doesn't love a delicious warm chocolately cake coming out of the oven????
And with school starting back this week, what a wonderful treat to pop into a lunchbox.
Treats in our home don't come in packets and they aren't full of fat!

This one even warms the heart of those who aren't fond of fat-free baking!
Choc-Coco Sultana Slice

You'll need:
1 cup wholemeal self-raising flour
3/4 cup dessicated coconut
1/2 cup coconut sugar (or other dry sweetener of choice)
1/2 cup sultanas
1/4 cup cocoa powder
1 teaspoon vanilla
1 cup soymilk (or other plant milk of choice)
50 grams dark chocolate (I used Lindt 70%)

In a large mixing bowl combine the flour, coconut, sugar, cocoa powder and sultanas. Make sure the sultanas are coated well with dry mixture so they don't all sink when baked. 
Pour in the soymilk and vanilla. Stir until well combined.
Break the chocolate into little pieces and stir through the mixture.
Pour into a lined baking dish (I used 20x30cm) and bake in a preheated 200C for 20 minutes.
Slice and serve.
Or allow to cool before putting in a lunchbox!

Meatless Monday - NUTS

Today's Meatless Monday food is nuts.

 FRUIT & NUT MUFFINS

To make 12 muffins you'll need:
2 cups self-raising wholemeal flour
1/2 cup mixed nuts (I used almonds, cashews, walnuts)
1/3 cup sultanas
1/4 cup craisins
1/4 cup currants
2 Tablespoons diced prunes (or sub extra sultanas)
1 tsp cinnamon
1/2 cup brown sugar
1/2 cup applesauce
1 Tablespoon ground flax seeds mixed with 3 Tablespoons boiling water
1 cup unsweetened apple juice

In a large mixing bowl combine all the fruit with the sugar, cinnamon and flour. Crush the nuts into small pieces and stir them into the fruit/flour mixture.
Make a well in the center and add the applesauce, flax mixture and the apple juice. 
Stir until just combined, don't over stir.
Pour into a lined muffin baking tray and bake in a preheated 180C oven for 20-25 minutes until cooked through.

Meatless Monday - LIME

This is my Meatless Monday posts for Lime.
Better late than never right???!!!

SWEET & SOUR CARROT SALAD


You'll need:
2 carrots
1/4 cup sultanas
1 spring onion
juice & zest of 1/2 lime
1 Tablespoon agave nectar
1/4 teaspoon nutmeg

Julienne slice the carrot and finely chop the spring onion. 
Combine all the ingredients, except the zest, in  a bowl. Mix well.
Serve with the zest sprinkled over the top.


This makes a great side for parties and BBQ's.

Banana Sultana Loaf

 
Back to real baking today! 
So pleased that this loaf turned out as good as I hoped it would.
It was so moist and tasty :-)

BANANA SULTANA LOAF

You'll need:
2 over-ripe bananas
1/4 cup soft silken tofu
1/2 cup brown sugar
1 teaspoon vanilla
1 Tablespoon ground flax seeds mixed with 3 Tablespoons boiling water
1 cup sultanas
1 1/2 cups self-raising wholemeal flour
1/4 cup plant milk of choice (I used unsweetened vanilla almond milk)

Blend together the bananas, tofu, brown sugar and vanilla til smooth.
Add the flax mixture, and sultanas, followed by the milk and flour.
Stir until well combined.
Pour into a loaf tin (lined if needed).
Bake in a preheated 180C oven for 40-45 minutes until cooked through and golden brown.
Allow to cool before slicing.

 Bit-like-cake Sandwich

No more boring sandwiches here!
Just fun ones.
Ones that taste like cake :-)
Carrot cake is the sandwich here.....

This is a great one for getting the younger kids involved too as each slice of bread has a spread, a topping & a sprinkling. You can show them on one slice and they can prepare the other slice!

         What you'll need:

Spread one slice of bread with sunflower seed spread, grated sultanas & cinnamon.
Spread the other slice of bread with soy cream cheese, grated carrot & nutmeg.

Slap together & cut.

Bread No-butter Breakfast Pudding

Is there any rule against having pudding for breakfast I wonder????
I did leave out the butter after all.
You could have this for dessert of course if you would rather, but I can't wait til the end of the day to have pudding! ;-)


8 slices old wholemeal bread
1 1/2 cups almond milk
3 tablespoons custard powder
1/2 cup sultanas
1 teaspoon cinnamon
Optional: 1 teaspoon demerara sugar to sprinkle on top for 'crunch'

Cut bread into quarter triangle slices & layer into a lightly sprayed pie dish. 
Gently press down into the pie dish.
Sprinkle the sultanas around the bread & in between the slices. The more you can push them down between the bread slices the better, as they can get overcooked very easily.
Whisk the custard powder into the milk until well combined.
Pour over the bread & press down on the bread lightly to make sure that all the bread pieces have absorbed the milk.
Sprinkle the top with cinnamon & demarara sugar if desired.
Bake at 180C for 25-30 minutes or until all the moisture is absorbed.



NB: You can use fresh bread if you want to - this is just a great way to use up old bread that would otherwise be tossed out.

Lazy Day's Teacake

This is a great cake for times when you don't want to pull out 10 things from the cupboard & have to measure bits and pieces of this and that.

It's really moist & tasty, and yet so simple.

This recipe calls for a prepackaged cake mix. There are plenty of vegan ones in the shops, check the ingredients list out because often they don't contain milk or eggs! Try Well & Good or Orgran for mixes that are also gluten free. Aldi do a blueberry muffin mix thats base is vegan - you could use this & just omit the sultanas if you want.

You'll need:
a packet of vanilla cake mix
385g pie apples
1/2 cup sultanas
2 tablespoons flax seeds
1 teaspoon cinnamon.

Grind the flax seeds til well ground. Add 6 tablespoons water & stir well. Let sit while you prepare the rest of the cake.
Empty the cake mix into a bowl. Add the sultanas. Coat the sultanas with the mix - this helps them not to stick together. Add the cinnamon.
In a separate smaller bowl mash the pie apples until all pieces are small & broken down.
Add the apples & the flax mix to the cake mix. Stir well. It will take a few minutes for everything to combine well, but it will eventually come together.
Line a rectangular baking dish with baking paper. Cut into the sides of the baking paper so it sits well in the dish.

Pour the mixture into the dish & place in a preheated oven at 180C for 50-60 minutes until a skewer inserted into the center comes out clean.
Allow to cool in the pan.

Slice & serve.
