Lentil & 3 C's Stew

Here's a nice easy meal that is great in winter because it's so warm and soothing and full of veggies. It is great by itself, but also pairs well with brown rice or couscous or baked potatoes or even freshly baked bread.
We make it in a pressure cooker, as it's super quick & easy. We have the ability to saute first in our pressure cooker which is a feature I love, as I really prefer the taste of sauteed onions over just having them cooked in the stew without being sauteed first. However, if you don't have a pressure cooker you can make it over a stove top -  it will just take longer and may require more water.
This has become a favourite in our home, especially at the end of the week when we have quite a few bits and pieces of veggies leftover and want to use them all up before we buy our fresh lot for the next week. My husband refers to this meal as "pressure cooker lentils" - just stating things like they are ;-)
It works with any different herbs you wish to use, depending on what flavours you'd like to add to your stew. We also occasionally use a drop of liquid smoke which adds a lovely depth to the stew. The options are truly endless. :-) 



LENTIL & 3 C's STEW
(Makes 6-8 servings)
You'll need:
2 cups dried green lentils
1 onion
4 cloves garlic
1/4 head cabbage 
2 carrots

2 stalks celery
1 zucchini
1/2 bunch silverbeet 
1/4 cup nutritional yeast
1/4 cup tomato paste
1 Tablespoon lemon juice 
1 litre veggie stock
1/2 litre water
1 teaspoon fresh rosemany

Chop all the veggies. 
Saute the onion and garlic. Add the remaining veggies to either a pressure cooker or stove top. 
If using a pressure cooker, add remaining ingredients and cook under pressure for 18 minutes. Release steam and serve. (You can use baby spinach in place of the silverbeet, add after steam has been released and stir through until wilted.)
For stove top, add the stock, water and lemon juice and cook for 30-35 minutes until lentils are cooked through and veggies are tender, adding more liquid if required. Then stir through the nutritional yeast, tomato paste, and rosemary.

"Sausage-less" Rolls

Life has been very busy for me lately - this is reflected in my lack of posts! 
I hope to be more motivated soon and share all the drafts that I have lined up waiting to be published. 

These "sausage" rolls were inspiration enough to get me started back at it again. They are super easy to make and they are very delicious. 

"SAUSAGE-LESS" ROLLS

To make 4 rolls you'll need:
2 tins lentils
1 Tablespoon each: nutritional yeast, onion flakes, soy sauce
1/2 teaspoon each: ground garlic, sage powder, liquid smoke and molasses
8 sheets filo pastry

Drain the lentils and combine them in a bowl with all the other ingredients except for the pastry.
Mash until the lentils have crumbled and the mixture resembles mince. 
Place a quarter of the mixture onto the side-middle of 2 sheets of filo pastry. 
Fold the side of the filo pastry in, then fold the edges up and roll until you reach the end of the pastry.
Repeat for the other 3 rolls.
Place on a lined baking tray and brush the tops with soymilk.
Bake in a 180C oven for 20 minutes until golden brown.



Best served while still hot from the oven.

Another year down - Christmas dinner review

2014 went so quickly for us!
I usually post quite a few pre-Christmas ideas but unfortunately this year I didn't get a chance to - my apologies.
I will however, do my usual wrap-up of our Christmas meal & include a few recipes that you might like to store up for next year (don't you just love pinterest for that reason)!



Pre-dinner nibbles of veggie sticks and baked corn tortillas with refried bean dip (recipe coming soon).

 Dinner included the following:

Beetroot & Green bean Salad (recipe below)

Agave Mustard Baked Veggies
Mini potato bites
Wholemeal Quinoa Loaf


Spinach, sweet potato, corn & mixed bean salad
Red Lentil & Spinach Loaf (recipe below)

And for dessert we enjoyed:

Christmas Chocolate fruit cake
Trifle (directions below)


Red Lentil & Spinach Loaf

375g packet red lentils
2 bay leaves

120grams baby spinach leaves
1 large onion
2 garlic cloves

400g can tomatoes
1 1/2 cups oats   **
1 teaspoon each: oregano, cumin, sage

BBQ sauce

Place the lentils and bay leaves in a saucepan & fill with just enough water to cover them.
Bring to the boil and then simmer til lentils are softened but not yet falling apart (approx 15-20 mins).
Pour the cooked lentils into a large mixing bowl, removing the bay leaves.
Stir through the spinach leaves and allow the warmth of the lentils to wilt the leaves.
In a small frying pan, place the chopped onion and crushed garlic - dry fry until golden brown.
Stir the onion/garlic mix into the lentil/spinach mix.
Stir through the tomatoes, oats and herbs.
Place mixture into a lined loaf pan and spread the top with BBQ sauce.
Bake in a preheated 180C oven for 45 minutes.
This will slice best if you allow it to cool briefly before removing it from the loaf pan.

** For a firmer loaf you can use 2 cups of oats, however this will make a more dense loaf too (pictured below). My husband prefers the loaf with 2 cups of oats, I prefer it with 1 1/2 cups of oats. So take your pick!!!




Beetroot and Green Bean Salad

60grams baby spinach leaves

60grams beetroot leaves
6 baby beets
1 cup green beans
6 walnuts

Dressing:
150g soft tofu
2 Tablespoons nutritional yeast
1 Tablespoon lemon juice

Combine the leaves in a salad bowl. Chop the baby beets and spread them evenly over the leaves. Remove the ends of the green beans and lightly steam them. Spread over leaves along with the crushed walnuts.
To make the dressing - blend all ingredients until smooth.
Pour dressing over salad to serve.






Trifle

You will need:
basic vanilla cake
custard- I doubled the quantity of the custard in this recipe, but halved the sugar
600grams frozen raspberries
1/2 cup fresh mint leaves.


Tear or chop the cake into little pieces.
In a glass serving bowl, layer 1/3 of the pieces of the torn cake, 1/3 of the raspberries and then a final layer using 1/3 of the custard, followed by a sprinkling of torn mint leaves.
Repeat layering process 3 times or until all ingredients are used up.
Refrigerate until time to serve.



I have to admit that I wasn't too disappointed to have some leftovers to enjoy!

Quinoa Stuffed Eggplants


Here's another post that has sat in my drafts for sometime.
I had taken several photos and for some reason my SD card in my camera decided it would corrupt the pictures. Not happy!
I have since upgraded my SD card and now I bring you these super yummy 


Quinoa Stuffed Eggplants
(Makes 6)
You'll need:
3 large eggplants
2 cubes frozen spinach
1 onion
2 cloves garlic
1/2 green capsicum
1 tin lentils
1 Tablespoon mixed Italian herbs
2 cups cooked quinoa
2 Tablespoons nutritional yeast
1/2 cup tomato passata cooking sauce

Bake the eggplants in a preheated 200C oven for 30 minutes until softened. Make sure you have pierced the flesh in several places with a fork so they don't explode. 

Cut the eggplants in half lengthways, and scoop out the softened flesh, leaving a small border (approx 1cm) around the edge of the eggplant.
Lay them out on a baking tray.

Soak the frozen spinach in some boiling water for a few minutes until defrosted. Drain. (Omit if using fresh spinach.)
Chop the onion, garlic, and capsicum.
Stir all the vegetables in a large bowl and combine with the drained lentils, nutritional yeast, herbs, quinoa and passata.  Chop the flesh of the eggplant that was removed and stir this into the mixture too (optional - it also makes a great dip if you don't want to add it to this mixture!).
Scoop the mixture into the cooked eggplants. Fill them quite well as this will give the eggplant case back its shape. Press the mixture down quite firmly. 
Drizzle a line of passata over the quinoa mixture (this is purely for presentation purposes, cause I think it looks better than just the plain mixture, salsa also works fantastic or any other sauce you'd rather).
Reduce the oven temperature to 180C and bake the eggplants, now stuffed, for a further 20 minutes until warmed through completely.

A recommendation and a story:
My husband took one bite into these & spat it out, declaring how awful they were!!!
I was chuckling to myself because I realised he had eaten the top of the eggplant! I thought everyone knew you weren't supposed to eat the top of eggplants - clearly not!
So I highly recommend removing the eggplant tops prior to putting these on plates.
After his initial opinion of this meal, he decided they were actually quite delicious!

WIAW - Last day of April

Can you believe it's the last day of April already?
Where on earth has this year gone???
Here's what I ate today:
Breakfast was a bowl of granola - This week I made a batch using this recipe from PlantPlate
Lunch was my fairly regularly eaten hummus pizza.

And dinner was this absolutely delicious & super easy


Lentil & Green Vegetable Dish
(Makes 6 servings)
You'll need:
1 cup green lentils
2 bay leaves
1 onion, chopped
2 cloves garlic
2 zucchinis, chopped
1 green capsicum, chopped
1 400g can tomatoes
2 cups stock1 Tablespoon tomato paste
1 teaspoon mixed Italian herbs

Put the lentils in a pot with 2 cups water and the bay leaves, bring to the boil and simmer for 25-30 minutes until the lentils are soft.
Drain and rinse.
In a large frying pan water saute the onions til soft and then add the crushed garlic cloves.
Stir in the other chopped vegetables and saute til slightly tender. 
Add the tomatoes, lentils, stock, tomato paste & herbs. Stir until well combined.Cover and let cook for 10 minutes until all is warmed through.
Remove bay leaves prior to serving.
Serve over a wholegrain of choice.
  Shown here served with a 1/2 fresh corn cob and farro.


This was the first time I have ever cooked farro. 
It was very chewy and I'm not sure if that is how it is or if I had just undercooked it - I'm about to go and research to find out!

Healthy Carbonara

Childhood memories of carbonara are not my most favourite to be honest. Thick cream & egg heavy pasta topped with fat dripping bacon and smelly parmesan cheese. 
Not my idea of tasty food.....

But then again, that didn't turn me off experimenting with this dish to turn it into something healthy, light and totally delicious :-)


Healthy Vegan Pasta Carbonara
(Makes 3 Serves)
You'll need:
250g dried pasta of choice

1 onion
3 cloves garlic
1-1 1/2 cups chopped mushrooms

Sauce:
1/4 head cauliflower
1/2 cup nutritional yeast
1 cup motherless milk of choice
1 Tablespoon apple cider vinegar
1 Tablespoon cornflour
1/2 teaspoon ground sage

Lentil "bacon" bits:
1/2 cup lentils (already cooked, either home made or from a can)
1 Tablespoon soy sauce
1 teaspoon maple syrup
1/2 teaspoon liquid smoke

Extra nutritional yeast to serve


Bring a large pot of water to the boil and cook the pasta per packet directions.
Slice the onion and crush the garlic. Dry fry with the mushrooms until browned well.
Place the lentils in a fry pay with the soy sauce, maple syrup and liquid smoke. Dry fry until the lentils begin to pop open. You can chop them into smaller pieces if you wish to make them more similar to 'bacon bit.
 


Place all the sauce ingredients into a blender and blend til smooth. 
When the pasta is cooked, drain and return to the pot. Pour the cauliflower cream sauce over the pasta and stir til pasta is evenly coated.




Serve with the mushroom/onion mix and lentil 'bacon' bits. Top with nutritional yeast.

Lentil Lasagne

I have always loved lasagne! And now that I'm vegan its no different!
This was what my daughter requested for her birthday meal - so it must be good!  


LENTIL LASAGNE

In a pot combine:
2 cups of green lentils
Add 4 cups water
Cover and cook til lentils are soft - approx 25mins.
Remove from heat and stir in:
1 Tablespoon Italian herbs
1 cup tomato paste

Cover 4 wholemeal lasagne sheets in boiling water to soften. Drain when ready to assemble lasagne.

Make the cheesey sauce by combining in a blender:
1 roasted red capsicum (I use a jarred one that is soaked in vinegar not oil) 
1 onion
1/2 cup nutritional yeast
3/4 cup soymilk
1 teaspoon cornflour
Blend til smooth and thick.

Assemble lasagne by placing half the lentil mixture on the bottom of a large baking dish and spreading til evenly distributed. 
Spread a thin layer of the cheesy sauce over the lentils.
Follow with two lasagne sheets.
Spread a thin layer of Italian Passata Cooking sauce over the lasagne sheets.
Add the remaining lentil mixture, topped by the remaining two lasagne sheets. 
Cover the lasagne sheets with the remaining cheesey sauce.
Bake in a preheated 180C oven for 30 minutes until golden brown.

Slice and serve :-)

Mixed Bean Burgers

I am a BIG fan of bean burgers! I'm yet to find a type that I don't like. But these ones were particularly tasty. Even my hubby who is not a bean burger fan thought these ones were ok.
 
Mixed Bean Burgers

You'll need:
2 cans lentils
1 can butter beans
1 batch okara -or other plant milk pulp (approx 3/4 cup)
1/2 cup breadcrumbs
1/2 cup tomato paste
1 Tablespoon garlic
1 Tablespoon Italian herbs

Drain all the canned beans & combine in a large mixing bowl.
Mash the beans together and then add the remaining ingredients.
With wet hands shape the mixture into patties and place on a lined baking tray.
Bake in a preheated 180C oven for 40 mins until golden brown and firm.
These burgers need to cook for longer than other burgers as the okara adds quite a bit of moisture to them. Don't worry they won't dry out being in the oven that long - they will just brown nicely and be cooked through and won't fall apart.

 

Alternatively you can fry them in a frying pan. Approx 7 minutes each side. Be gentle when flipping.







Makes 12 burgers

POTATO AND LENTIL LAZY NIGHT STEW - Easy Mid-week Meal

I have made this 'stew' (for want of a better word) several times.
Its so quick & easy but yet really tasty. That makes it great for those evenings when we are late home from one activity and not long til we need to leave for the next....

The added bonus is that these are simple foods that we almost always have on hand.

POTATO AND LENTIL LAZY NIGHT STEW

To serve 2 you'll need:
1 onion
2 potatoes
1 zucchini
1 cup button mushrooms
1 can lentils
1/4 cup tomato paste
1 cup fresh basil leaves, torn

Chop the onion, potatoes, zucchini and button mushrooms into small pieces. 
Add to a frying pan and lightly saute, adding small amounts of water to stop from sticking to the pan. 
Drain the lentils and add them to the veggies with the tomato paste. Cover for 15 minutes.
Remove lid and stir through the basil.
Serve with black pepper.

*You can sub fresh oregano in place of the basil. 
Equally as tasty, but changes the meal completely!*

Red Lentil & Tortilla Bake

Although when I first thought of having my bake off I was very tempted to do only cookies & cakes, I realise that baking extents past sweets! Shame really!!!
So today I bring you another savoury "baked" recipe.

This time in the form of "pie". Of course I mean pastry-less pie ;-)


RED LENTIL AND TORTILLA BAKE
You'll need:

Lentil mixture:
1 cup red lentils
1 x 400g can diced tomatoes
2 cups water
1 onion, chopped
1/2 capsicum, seeded and chopped
2 sticks celery, chopped
2 cloves garlic, grated
1 teaspoon dried thyme
1 teaspoon chili
1/2 teaspoon paprika

4 tortilla wraps
tomato paste
dried thyme

Place all the above ingredient from the lentil mixture list in a pressure cooker**. 
Bring to full pressure and then cook for approx 15 minutes. (Note that pressure cookers can vary so check your manual for a recommended time for cooking red lentils.)
Place on tortilla in the bottom of a circular casserole dish. Pour one third of the lentil mixture over the top. Repeat the layering process until you have three layers of tortilla and lentils.
Place the last tortilla on the top & spread the top tortilla with tomato paste and sprinkle with dried thyme.
Bake in a preheated 200C oven for 20 minutes until browned on top and warmed through.

Now that's my kind of pie :D

Hints: You can pre-make this pie and store it in the fridge. If you choose to do this you will need to lower the oven temperature and cook for a bit longer to completely warm it through.

*Note that if you don't own a pressure cooker you can still make this mixture on a stove top, it will just take longer. *

Lentil "meat"balls

 
Today I'm adding another pastry-less finger food option.
A realllllllllllllllly tasty one, that is very easy to make and can also accompany a main meal.

LENTIL "MEAT"BALLS
You'll need:
2 tins lentils
1/4 cup tomato paste
2 Tablespoons breadcrumbs
1 Tablespoon mixed Italian herbs

Drain the lentils and add to a bowl.
Mash well. 
Stir in the tomato paste, breadcrumbs and herbs until well combined.
Shape into little balls.
Place balls on a lined baking tray.
Bake in a preheated 180C oven for 20-25minutes until well browned and outsides are crisp.

* This will make 30-35 small balls
Great for nibbles, party food or served as a main with pasta or mashed potatoes.

To make a sauce to go with the balls dry-fry a finely chopped onion with 2 shredded garlic cloves. When the onion starts to brown, add as much tomato passata as desired (I recommend half a jar). Bring the sauce to a boil and then add the meatballs and a Tablespoon of Italian herbs and gently stir until warmed through.
