Vegan Mofo Day 12 Spicy without heat! - Mexican Baked Mushrooms


Today's mofo prompt is "Spicy without chilies".
Mexican food is often made with chilies and yet for those who don't like heat 
Mexican food also had a lot of flavour.

Here I show you how to enjoy some Mexican flavours without adding any chili..... 
and for those of you who do like heat you can always add some chili in!

This is a meal idea without exact quantities stated. The reason I do this is because I always like to encourage people to get experimental in their kitchen and enjoy the cooking process. It a wonderful way to realise that creative meals don't have to be time consuming or difficult to make. Whenever I make meals like this I make a comment to my husband "It's not that hard to make quick, easy yet enjoyable vegan meals! Why do some restaurants find it so difficult!"


MEXICAN BAKED PORTOBELLO'S

                            You'll need:
                                   Large portobello mushrooms
                                   Cooked black beans
                                   Can or tub of diced tomatoes
                                   Mexican spice mix/taco mix or
                                       - paprika, cumin, coriander & oregano

                                   Avocado
                                   And a batch of my basic cheese sauce

Remove the stems from the mushrooms.
Place them in a microwave proof container with 1cm of water and heat for 2 mins. This helps to soften them and significantly reducing oven cooking time.

In a mixing bowl combine the black beans, tomatoes and spices.
Drain the water from the mushrooms and place them in an oven proof dish.
Fill the mushrooms generously with the black bean/tomato mixture and bake in a preheated 200°C oven for 15-20 minutes until mushrooms have cooked through and the black bean mixture is hot. 


Pour a freshly made batch of cheese sauce over the top of the mushrooms 
and serve with slices of fresh avocado.


I feel like this meal looks a little fancy and if I got served this 
at a restaurant I'd be more than happy!

Vegan Mofo Day 10 Baking without Flour - Breakfast Brownie




Today's vegan mofo prompt is "Baking without Gluten".
Whilst this recipe *may* contain gluten due to the oats, it is a flour free recipe which is something that is very relevant to me as I shared in my Introduction Post! For a guaranteed gluten free version you can substitute quinoa flakes in place of the oats.
I am quite enjoying my flour free life and with delicious breakfast treats like this, it's no wonder that I am not feeling deprived at all!
It would also make a great dessert for anyone who wants a little after dinner treat! 



Single Serve Black Bean Breakfast Brownie

                                  You'll need:
                                        1/2 cup cooked black beans
                                        1 Tablespoon ground flax seeds
                                        1/2 teaspoon cacao powder
                                        1/4 cup rolled oats
                                        1 small overripe banana
                                        1 teaspoon vanilla

Combine all the ingredients together in a mini food processor and pulse until lightly combined (best to keep some chunks for added satiety - Chew your food!). Add a splash of water if it's needed to combine the mixture into a thick batter. The water may or may not be needed depending on the size and ripeness of your banana and how well your beans are cooked.
Pour mixture into a silicone baking mould. I press my mixture into a quarter of a large square one. It doesn't spread as it cooks so this works well. Bake in a preheated 200°C oven for 20 minutes until cooked through and edges are crispy.

Delicious served with yogurt and berries.


Showing the pieces of banana and beans so you can see it's not pulsed thoroughly. 

*I find this sweet enough with just the banana, however if you'd like a sweeter version you can add 1 Tablespoon date paste to the batter.
*Multiply quantities if you want to make a multiple serves.

Vegan Mofo Day 2 Emoji Inspired- White Bean Spread

Today's inspiration is bought to you by Emoji's!!!

When I was thinking about emoji's I checked my phone to see my most recently used ones to get my inspiration, and other than smiley faces and blowing kisses (mainly to my husband!) my most commonly used ones are the tasty face and a thumbs up! Generally speaking I use the 'thumbs up' emoji when I'm thinking "too easy"!


So today I bring you a simple creation that truly is tasty and is so quick and easy it's worth a thumbs up!  


WHITE BEAN SPREAD


You'll need:
(to serve one)
1/2 cup cooked white cannellini beans
1 small overripe banana
1/2 teaspoon vanilla
1/4 teaspoon lemon juice
pinch of cinnamon powder

Combine all the ingredients in a mini food processor and pulse until the mixture forms a smooth spread. 

Use as soon as it's made because the banana will begin to brown if stored. 
Delicious served over rice-cakes, with berries, nuts and/or nut butter! 

This spread is delicious and has no 'beany' taste due to the other ingredients! 
I highly recommend you give it a try! 


Want to try another delicious alternative - replace the white beans with black beans and substitute the lemon juice for 1/2 teaspoon cacao powder!

Kids Lunchbox Club: Chocolatey Spread


Apparently lots of kids still take nutella sandwiches to school even when their school is nut free! 
But it's not the nuts in nutella that bothers me (and hey let's face it, the nut content is truly quite pitiful)..... It's the milk and sugar and fat.
So here's a much more healthful version, and one that can be taken to nut-free schools guilt free!



CHOCOLATEY SPREAD


       You'll need:
             1 cup dried pitted dates

             1 1/2 cups cooked black beans
             2 Tablespoons cocoa powder
             1 teaspoon vanilla essense



Soak the dried dates in boiling water for about 10-15 mins until softened. Drain the dates and combine them in a food processor with the other ingredients. Blend until smooth, or until desired consistency. 
Transfer to a air-tight container and store in the fridge for up to a week.
Spread & enjoy :-)

Kids Lunchbox Club - Quick Mexican Quinoa Salad

My daughter has decided that she quite loves quinoa! This is thanks to her testing out a Dreena Burton recipe. So this means now she requests it for her lunchbox salad. We don't often eat quinoa, but I had a batch made up this week and with a few leftover bits and pieces from a Mexican-inspired meal we had prepared earlier in the week this delicious salad was created.
Nevermind the kids! I reckon this lunchbox meal would please any adult too!

QUICK MEXICAN QUINOA SALAD

To serve one you'll need:
1 cup cooked quinoa
2 Tablespoons of salsa
1/4 cup black beans
1/4 cup corn kernels
1/4 small capsicum - chopped
1/2 small avocado - diced

Stir a tablespoon of salsa into the quinoa and mix well. 
Add the other ingredients and stir through. Top with the remaining tablespoon of salsa.

Slow-cooked Mexican Stew

Monday nights are slow-cooker night in our home.
I must admit that for the first few years of owning a slow cooker I used it for nothing other than soup.
I am discovering that there is so much more than just soup that can be done in the slow cooker. I regularly make dried beans and love that on the high function it takes only 2-3 hours to cook them from scratch, even without pre-soaking if I haven't had the chance to do that.

Here's a way I make a complete meal that isn't soup:

SLOW-COOKED MEXICAN STEW

You'll need:
1 cup brown rice
1 can black beans
1 can red kidney beans
1 onion
1 green capsicum
1 cup frozen corn kernels
1 can tomatoes
2 cups vegetable stock
2 garlic cloves
1 teaspoon taco spice mix of choice

Chop all the vegetables and drain the beans.
Add all ingredients to slow cooker. 
If you have the option, saute the onion & garlic first. If not, don't worry because it will still work out and be delicious.
Cook on slow for 6-8 hours.

Serve.

The rice will fluff up to be lovely & thick. It will absorb all the liquid so that this isn't the consistency of a soup.

Mexican Meets Italian

Another recipe that eventuated when my hubby felt like something different than me! 
He wanted pasta, I wanted Mexican.............. so we decided to merge them!

One word.....
       YUM

Oh, and another few words too.....
       TRY IT!

To serve 2 you'll need:
200g spaghetti
1 cup black beans
1 red capsicum, chopped
1 zucchini, chopped
1 onion, chopped
1/2 cup corn kernels
1 teaspoon cumin
1/4 cup cashews
1 teaspoon chili
1 teaspoon garlic
1 teaspoon lime juice
2 Tablespoons nutritional yeast
1/2 cup water
1/2 cup salsa
1/2 avocado, chopped into pieces

Cook spaghetti per packet directions.
In a large frying pan combine the black beans along with the chopped vegetables, corn kernels and cumin. Dry fry til veggies have softened, approx ten minutes.
While the spaghetti and bean mixture is cooking make the sauce.
In a blender combine the cashews, chili, garlic, lime juice, nutritional yeast, and water. Blend until smooth.
When the spaghetti is cooked, drain & return to the pot. Pour the sauce over the spaghetti and stir until all the strands are lightly coated, warm over gentle heat just so the sauce is warmed through.
Serve the spaghetti in a bowl with the bean/veggie mix spooned over, a large spoonful of salsa and some chopped avocado pieces.

Mexican Casserole

A twist on Mexican!
A great tasting dish for something that is rather effortless to make.
It takes a bit of time & preparation but its not hard.
Everyone in our home really loves it!

You'll need:
1 pack corn tortillas
2-3 cups cooked brown rice
1 can black beans           (or 1 cup home-made pre-cooked)
1 can red kidney beans   (or 1 cup home-made pre-cooked)
1 red capsicum
1 green capsicum
1 zucchini
1 onion
1 can corn
1 can tomatoes
1 red chili     (or to taste)
1/2 cup salsa
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon coriander

Chop the tortillas into bite size pieces.
Place on a lined baking tray & bake at 200C for 10-15 minutes until just firm but not yet brown. (Cooking times with vary depending on the tortillas you use and your oven.)
Drain the canned beans, and canned corn. Chop the onion, zucchini, capsicums and chili. Combine all of these into a large casserole pan or baking dish. 
Add the rice and spices. Mix well. 
Stir through the tomatoes and salsa.
Spread evenly around the pan.
Cover with foil or a lid and bake for 30minutes in a preheated 200C oven.
The tomatoes will be bubbling hot when you take the dish out of the oven.
Spread the baked tortilla chips over the top and gently press them down into the mixture.
Return the dish to the oven and continue to bake for a further 10-15minutes until the chips are browned on top.
Serve and enjoy!
Perfectly satisfying by itself or you can add mashed avocado or tofu sour cream if you like.

WIAW - Mexican Tofu Hash

Mexican Tofu Hash

When I think of a meal called "hash", potatoes come to mind! But who said you can't make a hash with tofu instead?!?!? You can always substitute the tofu for potatoes if you want a traditional hash!
I love coloured cooking!


You'll need:
1/2 cup black beans
100g firm tofu
1/2 red capsicum
1 spring onion
1/2 teaspoon each: paprika, cumin, oregano, chili
1/4 cup salsa



Chop the tofu, capsicum and onion into little cubes. Add to a dry preheated frying pan.
Add the herbs. Stir and add spoonfuls of water as needed to stop the mixture from sticking to the fry pan. Cook for approx 10 minutes or until veggies are soft. Stir in the salsa.

Serves 2.

Mexican Layered Pie

Here's a twist on the traditional Mexican wrap!
It looks amazing to serve as a dish. It keeps well, and makes for great leftovers that can be easily transported.
My daughter loves the way the tortilla layers become similar to "pastry"!

You'll need:
1 can black beans
1 can crushed tomatoes
1 can corn kernels
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon oregano
4 tortillas (or more)
1/4 cup salsa
Optional: chilli

Drain the beans & place them in a bowl with the cumin, paprika, oregano & chilli (if using). Mash the beans well. Add the tomatoes and combine.

Place one tortilla on the bottom of a large circular casserole dish. 
Top with 1/3 of the bean mixture. Spread evenly over the tortilla. Place 1/3 of the drained corn on top of the bean mix.

 




Follow with a tortilla, more bean mix & more corn.
Repeat 3 layers.
Finish with a tortilla layer & then spread the top of the last tortilla with the salsa.

Bake at 200C for 20 minutes.
Slice and serve.

Mashed Sweet Potato with Mexican Spiced Black Beans

WARNING: Super yummy dinner recipe below!

Mashed sweet potato:
1 sweet potato per person

Peel and chop the sweet potato. Put in a pot of water & bring to the boil & simmer until potato is soft (approx 15mintes).  
Drain the potato & then return to the pot & mash well.
 
For the bean mix:
(This bean mix will make 4 servings)
1 tin black beans
1 corn cob, kernels cut off
1 red capsicum
1 onion
1 zucchini
2 garlic cloves
1/2 teaspoon chili (or to taste)
1 teaspoon each dried herbs: cumin, paprika, oregano, thyme
3 Tablespoons tomato paste
3 Tablespoons water


Chop all the vegetables into small pieces & combine in a frying pan with the crushed garlic. Water saute until they are soft (approx 10 minutes). Drain the beans & add them to the mixture. Add the herbs & stir well. 
An amazing collection of colours!

Add the tomato paste with the water & stir until the sauce has lightly coated all the vegetables. Leave on the heat for 3 more minutes until everything is warmed through.

Serve the bean mix over the mashed sweet potato.

Any leftovers make for a great burrito filling!
