Flourless Sweet Potato Waffles

My potato waffles have been a huge hit amongst the plant based community. They make a great bread replacement for burgers!
But today I bring you a sweet potato waffle that works fantastic as a sweet breakfast treat!
And honestly who wouldn't want a breakfast like this?!?!?




FLOURLESS SWEET POTATO WAFFLES
(To serve 1)
               1 small sweet potato
               1 heaped tablespoon ground flax seeds
               1/4 cup boiling water
               small drop of vanilla essence
               1/8 teaspoon ground cinnamon

 

Preheat your waffle iron.
Place the sweet potato in a microwave and cook for approx 5-6 mins until inside is tender. Note that time will vary in different microwaves. If you don't have a microwave you can cook the sweet potato in the oven. But I don't recommend boiling the sweet potato over a stove top as the consistency will end up different.
Whilst the sweet potato is cooking, prepare the flax mixture. Pour the boiling water over the ground flax seeds and whisk with a fork til thickens. Allow to sit for a few mins.
Remove the sweet potato flesh from the skin, discard the skin & mash the flesh into the flax mixture. Add vanilla & cinnamon, stir until completed combined. The mixture will be quite sticky.
Pour the mixture into the waffle iron & cook on medium for 8-10 mins. You can cook on a higher heat if you'd rather, but the waffle will come out darker. Don't lift the lid while it's cooking or this will pull the waffle apart. It needs to be fully cooked before the lid is lifted. You can wait longer, up to about 15mins on a lower setting and it will be fine. If you are in doubt, they are better to be left a little longer, not shorter!

When your waffle is done, remove & serve with desired toppings!

WIAW - On a Tuesday


This weeks What-I-Ate-Wednesday post happens to be about what I ate on Tuesday.

Mainly because I have wanted to share this 'yogurt' recipe for sometime and doing it this way actually prompted me to get motivated to do it!

But first..... here's what I ate yesterday:
Pawpaw yogurt with oats, flax and passionfruit for breakfast.
     Roasted sweet potato with refried beans and salsa, and kale chips for lunch.
            Spinach noodle and shiitake mushroom peanut stir-fry for dinner.


Paw Paw Yogurt

In a blender combine:
1 cup frozen paw paw pieces
1/3 cup frozen raspberries
1 Tablespoon probiotic
1/2 cup plant milk (more or less depending on your blender)

Blend til smooth and thick.
Serve straight away.

There is something about the tang of the raspberries mixed with the creaminess of the paw paw that makes this so similar to yogurt!


I'm not a huge fan of pawpaw by itself, though it does bring back fond memories of my grandmother! She used to serve us pawpaw for dessert when we stayed over in the school holidays.
I must admit that most people I ask say that pawpaw is not their favourite taste. 
Thankfully, in this recipe you can't really taste the pawpaw itself!

In (and out) My Kitchen - November

IN AND OUT MY KITCHEN NOVEMBER

Well this is a bumper edition that's for sure!
I not only have several things IN my kitchen to show you, but also several things that have gone OUT of my kitchen!


I have been attempting to reduce our clutter & with that comes parting with some kitchen items that no longer are used as frequently as they should be.

These include a bread maker and a yogurt maker (to name a few):
I never had much luck making dairy free yogurt despite several attempts.

And so that brings me to a few new food items that I have in my kitchen to try:
One being coconut yogurt.
This is a new product available at Woolies.
Its delicious! But quite high in fat and a bit costly. 

Unrefined sugar to cook with - replaces raw sugar in recipes. Not necessarily a "new" thing for me, but I do tend to refer to 'raw sugar' in recipes even when I'm using an equivalent unrefined sugar.
I picked up this range of McDougall Right Foods from Coles. I was soooooooo excited that they stocked them! I LOVE that these have no added oils. I haven't actually tried any yet. My husband tried the lentil soup and said it was ok. Again, on the costly side but worth it to have healthy convenience foods for when they are needed. I have the remaining items in my drawer at work for one morning when I don't make lunch!
And peanut butter cacao spread which I also picked up from Coles. 
To be honest, I would much rather just have plain peanut butter. This didn't tickle my fancy! But my daughter LOVES it.

I also have a bag of Mrs Mays snacks. These are soooooooooo delicious. Made using whole ingredients these are a healthy snack and although they look small, just 2 pieces is actually quite filling, so I'm very pleased with how long this bag has lasted us!
In my kitchen is this vegan Christmas pudding that is waiting til next month when it will be devoured! Also purchased from Coles & especially marked "vegan" - gotta love that!!!
Its nice to have a little one for our family when it is time to share a Christmas meal with our extended family. I'm sure I will have enough other food I need to make without adding Christmas pudding to the list!!!!

In My Kitchen is a range of new teas that I have purchased and am looking forward to trying:

In my kitchen is this bag of rocket seeds that I'm waiting to plant. We are running short of pots in our yard. I feel a Bunnings trip coming up soon! 
On my kitchen window sill is this little basil plant that we've grown from a seed :-)
It is due to be transferred to our garden anytime soon, where it can joint the other basil that is growing!

Which brings me to some other things OUT of my kitchen that will hopefully one day come IN!

We have several edible items growing around our garden at the moment. Since we don't have any lawn they all need to be in pots. I can take NO credit whatsoever for our garden because I do not have any green thumbs on my body at all! My hubbie does all the gardening work! I'm quite proud of his effort! Its so incredibly exciting to see the produce actually beginning to grow and not just having a plant full of leaves!
Here's some others that we currently have growing:

Tomatoes - if these succeed they will become tomato sauce because none of us actually like eating fresh tomato!
Lemon tree - I really hope this one takes off. I miss having a lemon tree.
Kale - however, it seems that we just can't keep the bugs from enjoying these leaves - then again, I can't blame them! We have been trying to get this to work for over a year now! We have a new cover to put on it and see how we go!

Last but not least, in my kitchen I have some new Norwex cleaning cloths.
For those of you who are not familiar with Norwex products, they are a company that make products that reduce the need for chemicals in cleaning. This includes  a large range of anti-bacterial clothes that use silver particles that only need water for cleaning.
I'm all for cleaning without chemicals so I'm eager to use these more and see how they go. So far I'm really really pleased with them.

Kids Lunchbox Club - Homemade Muesli Bars

Homemade Muesli Bars

Line up the kids lunchboxes cause they'll all want a piece of this.....

This is so easy to make - and very versatile - you can substitute many different flavours and varieties to make muesli bars options that are endless!

This is what I used: (for the batch pictured!)
1/2 cup soy or coconut flour
1 Tablespoon cocoa powder
1/2 cup rye flakes
1/2 cup wholemeal flour
1/3 cup brown sugar
1/2 cup soy yogurt (I used blueberry flavour, any would work)
1/2 cup apple sauce
1/2 cup soymilk
1 Tablespoon apple cider vinegar
2 teaspoons vinegar

Pour the soy milk into a measuring jug and stir in the apple cider vinegar - this will curdle the milk and make it thick. 
In a large bowl combine all the dry ingredients. Make a well in the centre and add the yogurt, apple sauce, milk mixture and vanilla. Stir until well combined and all dry ingredients are coated with wet mixture.
This mixture will be very sticky.
Line a 25cm square baking pan with baking paper. Pour the batter into the pan and bake at 180C for 25 minutes.
Allow to cool before slicing.

This makes 12 bars - depending on how wide you slice them.
To avoid arguments I recommend slicing them evenly ;-)

Variations:
* You can sub any muesli you like or just use oats. 
* I don't normally use coconut flour due to it's high fat content but had some on hand that needed to be used up - you can sub almond flour or other ground nuts,  dried plant-milk pulp or nut/seed milo.

Parfait

Parfait reminds me of the movie Shrek!!!
I love the character donkey - he is such a crackup.
 
So, in the words of Donkey: 
"You know what ELSE everybody likes? Parfaits! Have you ever met a person, you say, 'Let's get some parfait,' they say, 'Hell no, I don't like no parfait'? Parfaits are delicious!....
Parfait's gotta be the most delicious thing on the whole damn planet!"

Well yeah, parfait is pretty delicious!
The literal meaning of parfait is "perfect", although Donkey was referring to it as a tasty dessert of layers, as it is commonly known.

I prefer to have parfait as breakfast or an afternoon snack.
Here's some great options for layers:
 
  • whipped coconut cream
  • cashew cream
  • yogurt
  • oats
  • crumbled rice cakes
  • nuts or seeds
  • gingernut biscuits
  • fresh fruits - try strawberries, passionfruit
  • dried fruits
  • soy-tella 
  • you could try okara if you really want to experiment
  • if you're feeling like a real treat go ahead and add some cacao nibs!!
The options are endless!
Experiment and find what you enjoy.

Here's a few of ours:
Afternoon parfait - strawberry soy-gurt, crumbled rice cakes, soytella, banana, strawberries, currants, sesame seeds, chocolate on top
Breakfast parfait - soy-gurt, oats, chopped prunes, sunflower seeds
 
And just for Donkey - showing the layers ;-)
