Easy Pancakes

There's endless ways to make pancakes! Here's a quick & easy recipe that uses basic ingredients and doesn't require flour.

                          EASY BLUEBERRY PANCAKES
                                  To serve ONE - 4 small pancakes

          1/3 cup rolled oats
          1 generously heaped Tablespoon ground flax seeds
          1 small overripe banana

          1/3 cup soymilk
          1/8 teaspoon each vanilla essence, ground cinnamon

          2 Tablespoons blueberries (optional)

In a food processor combine the oats, flax, banana, soymilk, vanilla and cinnamon. Pulse several times until the mixture comes together but is not completely broken down.
Stir through the blueberries if you're using them.
Heat a non-stick frying pan, then reduce to medium heat. Pour the batter into the frying pan in quarter lots to make 4 small pancakes. As the pancakes begins to bubble around the sides, flip and allow the other side to cook until golden brown.




Serve with toppings of choice - shown with soy yogurt & raspberries.


NOTE: For pancakes that have a lower calorie density you can replace the soymilk with water.

Choc-Orange Pancakes

Welcome to the final edition of Meatless Monday A-Z.
Today's ingredient is Zest.

Although I have been eyeing off our neighbours overflowing lemon tree for the past couple of weeks, I decided not to pinch any without seeing them & asking them first!!!
So today, although I had high hopes of bringing you a lemon zest recipe, you instead have an orange zest recipe. But don't worry, I'm sure it won't disappoint!


Choc-Orange Pancakes
You'll need:
1 cup wholemeal flour
1 teaspoon baking powder
1 Tablespoon ground flax mixed with 3 Tablespoons boiling water
1/2 cup motherless milk
1 teaspoon apple cider vinegar
1/2 cup orange juice (freshly squeezed)
1 Tablespoon orange zest
1 Tablespoon dairy-free chocolate chips

Make a "flax egg" by combing the ground flax with the boiling water & whisking together with a fork. Set aside to thicken.
In a measuring jug combine the milk and apple cider vinegar and whisk til milk starts to separate and thicken slightly.
In a mixing bowl combine the flour & baking powder. 
Add the zest & choc chips. Stir through til evenly distributed. 
Make a well in the centre and combine all the wet ingredients. Mix well.
Pour spoonfuls of mixture onto a preheated frying pan & turn when bubbling. Give the final side a minute or so before removing and serving. Repeat until all the batter is used.

This will make about 12 small or 6 large pancakes and "should" serve 2.
Though they are reallllllllllllly good, so perhaps you're not willing to share ;-)

WIAW - A week worth of Breakfast!

Today is Wednesday.
On Wednesday I usually take a picture of what I eat for each meal.
I did that last week.
Last week I realised that nearly every Wednesday its oats for breakfast, salad for lunch, leftovers or slow cooker meal for dinner.
I realised that is boring to post the same thing each week.
So........
I decided that instead of doing that this week I would instead share with you.......

A week worth of Breakfast!

Since I'm such a big breakfast lover of course..... but that does not mean I'm a morning person! If it wasn't for breakfast then I think I could spend all morning in bed!
I also tend to have oats every weekday morning and pancakes every weekend.
This week I decided I would have some other types of breakfast.... ~some~

So here's a collection of all my breakfast's for the past week -->

A breakfast wrap:
Hmmmmm, that doesn't really show much does it - let's unwrap and try again.....
A wrap with banana, goji berries, macadamia spread & cinnamon.

Sometimes you just need the day to start with chocolate!
A smoothie always hits the point!

Unprocessed - Week 5

Sharing a collection of my meals from this week as I'm continuing my unprocessed journey.
I hope some of these pictures inspire you to make more meals from scratch or at least give you some ideas. 
If you have any questions feel free to leave a comment! 
I will provide recipes where I can :-)

Aduzki bean mix served on brown rice.


I had pancakes several times this week. I just felt like having them each morning! They really aren't that hard to make & I enjoy flipping them immensely!  Each time I had some I made different flavours!
These ones are Mcdougalls fluffy pancakes. A bit more involved than plain pancakes but oh so worth it! They were incredibly tasty! Great way to start the morning!


Simply pan hash-browns with lentil bolognese on salad. Easy mid-week lunch.
The hash browns are made by grating a potato and forming little circles in a frying pan and dry-frying til brown. So easy and quite tasty!

Trying out the tofu burger recipe from Dreena Burton's latest book - Let Them Eat Vegan.
These burgers were very tasty and so filling. They held their shape without falling apart, were full of flavour and re-heated without any problems. My idea of a perfect burger! As usual, a great recipe by the amazing Dreena Burton! If you don't have any of her books yet, I highly recommend getting them!





My 2 apple refresher drink. Very satisfying on a warm summer's day!


Bean loaf served with mash and veggies. Recipe coming soon! :-)


Brown rice with raisins and cinnamon.


Portable lunch - leftover tofu burger with salad.

More pancakes! Raspberry and banana flavour.
Combine: 3/4 cup spelt flour, 3/4 cup oatbran, 1 teaspoon baking powder. Mash a banana and stir into flour mixture. Add 3/4 cup soymilk and 1/4 cup frozen raspberries.



Fat-free home-made fries with vegetable medley.
Super simple and really satisfying.

I told you I over-did the pancakes this week ;-)
Oatmeal pancakes with strawberries and maple syrup.


Mashed red kidney beans with tomato paste served with lettuce on a pita bread.

Home-made pizza on chickpea base with pizza cheeze sauce.

WIAW - Unprocessed Tuesday Week 2

I decided to post Tuesday's meals this week for what-i-ate-wednesday! Why post Tuesday instead of Wednesday you may ask?!? Well because Wednesday's meals always seem so boring being my work day! 

Today I experimented a bit, so I thought it would be more fun to share today!
Possibly Wednesday will be full of today's leftovers anyway ;-)


Breakfast -->
Banana Oat Pancakes
Same as my blueberry-choc-oat-pancakes, just omit the blueberries and add one over-ripe mashed banana.


Lunch -->
I experimented with making my own tortillas! :-/
Let's just say... next time I'll stick to store bought ones!
It was a lot of fun but they just weren't so great to roll up into a salad wrap. 
That said, they were still very tasty.
They worked out way better as 'dipping bread' for this pumpkin cheeze-sauce than for wraps!

Dinner -->
More experimenting :-) I love having fun in the kitchen.
What is that quote Nigella Lawson says at the start of her series Kitchen - "If I'm in the kitchen, I'm happy". Well personally, I couldn't agree more.

For this evening's meal I made Cauliflower fried-rice with sweet potato and chick pea burgers.

The cauliflower fried rice but a bit of an experiment but it was soooooo amazingly tasty that I'm going to make it again and then share the recipe soon! 
I did go back for seconds ;-)

The sweet potato and chick pea burgers were really simple. Just steam a small sweet potato and then toss it in a food processor with a drained can of chickpeas, chopped spring onions and enough besan flour to hold the mixture together. Then bake for 30 mins until golden brown. ~Really tasty~

Dessert -->
As always.... banana ice-cream! This time with cherries and cocoa too :-)
mmmmmm black forest flavour soft-serve! Soooooo good!

Blueberry Choc-Oat Pancakes

My kind of breakfast! 
You'll need:

3/4 cup oat bran
1/2 cup spelt flour
1 teaspoon baking powder
2 Tablespoons cocoa powder
1 cup plant milk
1/4 cup frozen blueberries

Combine all ingredients in a mixing bowl. Stir until well combined. 

Make pancakes :-)
Serve with fresh blueberries and a drizzle of maple syrup! Adds a nice touch of sweetness to your pancakes.
 Breakfast perfection!

Makes 6 pancakes.

Orange Pancakes

I loooovvvvveeeee pancakes, as I'm sure you've already worked out by now. And with the right ingredients they can be a wonderfully healthy start to your morning - who said they need to be full of fat and sugar???

Try these for a nice citrus tang to your pancakes!

Perfectly compliments a freshly squeezed glass of orange juice - or for those who love choc-orange flavour, a glass of chocolate soymilk is perfect (and my preference!!!!).

You'll need:
1 tablespoon ground flax seeds mixed with 3 tablespoons water, sit aside in fridge while preparing other ingredients
In a mixing bowl combine:
1 cup wholemeal flour
1/2 teaspoon baking powder
rind of 1/2 orange, grated (grate the whole rind & save some to sprinkle on top)
1/4 cup freshly squeezed orange juice
3/4 cup ricemilk or other non-dairy milk

Add the flax-egg & mix well.
NB: I recommend grating the rind off the orange prior to juicing, its quite difficult to do it afterwards!
Do you really need directions how to cook pancakes??? ;-)

Now that's my idea of a perfect breakfast....
oh wait - with some maple syrup of course :D

Pump-cakes

Pumpkin pancakes???
Quite tasty really!
What a great way to have something a little bit different for breakfast.

I never used to like pumpkin but lately I have had a bit of a pumpkin fettish. I'm not a fan of baked pumpkin at all - but I love using pumpkin to make sweet dishes. 
Have you tried my pumpkin pie mousse?

When I buy a pumpkin, I just boil it in a pot and mash it & keep it in the fridge to use.
This is what happens when you have mashed pumpkin leftover in the fridge!

1/2 cup wholemeal flour
1/2 cup ricemilk (can use soymilk but the sweetness of ricemilk is nice)
1/2 teaspoon bi-carb soda
1/4 cup mashed cooked pumpkin
1 Tablespoon maple syrup

Mix all ingredients in a bowl & stir until smooth.
Cook like pancakes (everyone knows how to do that right????!)  :-)
Makes 6 little pancakes - you can decide if that serves 1 or 2 or even 3 ;-)
 I found these really tasty just by themselves. 
Also nice with maple syrup or fig jam :-)
