Blueberry Breakfast Muffins

These are a delicious, sugar fee, oil-free, yet moist muffin. They are easy to make and we often prepare them the day before if we will be staying somewhere overnight and want a quick and easy breakfast. My husband always said he didn't like blueberry muffins..... now he LOVES them!

BLUEBERRY BREAKFAST MUFFINS
To make 4 jumbo muffins you'll need:
1 cup oats
1 cup wholemeal spelt flour
2 teaspoons baking powder
1/4 cup ground flax seeds
1 cup dates (soaked in boiling water)
1 cup blueberries (fresh or frozen)
1 teaspoon vanilla essence
1 teaspoon cinnamon
1 cup motherless milk of choice
Optional extras:
2 Tablespoons chocolate chips
small handful of walnuts

In a large mixing bowl combine the oats, flour, baking powder, flax seeds and cinnamon. 
Place the drained dates, milk, and vanilla in a blender and blend til smooth.
Pour the wet ingredients into the dry ingredients. Stir til combined. Add the blueberries and fold through the batter gently.
Pour into a lined or lightly sprayed jumbo muffin tin.
Top with crumbled walnuts if desired.
Place in a preheated 180C oven for 25-30 muffins until cooked through.

  1. Oh these look delightful. I will have to try them. I am not big on muffins but my daughter loves banana and blueberry muffins. I think I'll make these over the weekend.She'd love that a lot.

    Once I make them, I'll have her post what she thinks at this link. She has her own website, but does write their too much since she's still in school. I'll make sure I give some to the BF also. I'm so glad he's very open to eating meatless cuisine.

  2. These sound like my sort of blueberry muffins - like your husband, I've never liked the commercial ones that don't have any genuine blueberry flavour to them! What a great breakfast idea.

    1. Thanks :-) I remember sometime ago watching a clip online about how so many products these days use only flavourings and not real ingredients! Any wonder those commercial ones don't taste like blueberries then!!!!

  3. They sounds great - I am happy to have muffins for breakfast but it doesn't seem right when they are sweet and cakelike - I'd much prefer these to wake me up (though I am a bit wary of frozen berries since the whole nannas berries recall)

      Yes, definitely valid to feel wary. Thankfully we have organic ones available near us not too expensive :-)

  4. Oh wow Sandy these look amazing! Do you have a jumbo size muffin tin or do you use a regular one and just fill it all the way up?
    The best muffin I ever had was in Deep Cove, Canada. It was filled with wholegrains, seeds and dried fruits. It was huuuuge, but the perfect treat after a day's hiking. When I got back home I kept day dreaming about that muffin. Wish I'd asked them for the recipe ;)

      Sounds like it sure was a delicious muffin! Not sure that cafe's are so keen to give their recipes away though ;-)
